THE KEBAB TRADITION ...
Kebab
- a dish the main ingredient of which is meat. Historically, kebab has been common in both Islamic and world cuisine.
Certain types of kebab (such as doner kebab) have spread throughout the world as part of the fast food cuisine.
They are usually served with Turkish bread, lavash, bun, pita bread, salads, and various sauces.
Several regional varieties came from from Turkish doner kebab. These are Arabian shawarma and Greek gyros.
In Europe, the word "kebab" usually means doner kebab, a Middle Eastern dish from Turkey.
The variety of kebabs is huge. All kebabs can be divided into several main types of cooking methods.
-
Skewer Kebab
In cooking these kebabs, the meat is cut into small chunks or slices and (often together with vegetables) put on skewers and grilled over a fire.
In common Western language, the word "kebab" means only this type. The most common and best known variety of this type of kebab is shish-kebab.
-
Minced Meat Kebab
These kebabs are made using minced meat, which is formed into various shapes and grilled over a fire.
A spit on which the minced meat is rotated is also often used for cooking.
-
Tandoor Kebab
This type is especially common in Pakistan and India. For cooking, a special oven, tandoor, is used in which pieces of meat are baked.
-
Stewed Kebab
For this special type of kebab, ceramic dishes are used in which the food is stewed at very high temperatures.
-
Rotating Kebab
The newest type of kebab. In cooking, an automatically rotating spit is used, onto which new pieces of meat are put on and roasted over a fire.
The roasted meat is sliced into thin shavings and served in sliced bread with vegetables and sauce, wrapped in pita bread, or served otherwise
